Fried Mississippi Catfish

Ingredients

  1. 1Cup Corn Meal
  2. ½Cup Flour
  3. 1Tbs. Paprika
  4. 2lb. Catfish
  5. ½ Cup Evaporated Milk
  6. 1tbs. Salt
  7. Dash of Pepper

Combine flour, cornmeal, pepper, salt, and paprika. Dip fish in milk mixture and roll in flour mixture. Fry bacon heavy until crisp. Drain Bacon but leave fat in pan. Fry fish in pan for 3 min's, turn carefully and cook other side for 3 min's, it should be golden brown.

Baked Lobster Tails

Ingredients

  1. Lobster Tail
  2. Butter
  3. Tin Foil
  4. 1 Lemon

Season with Salt and Pepper, wrap each tail (or each half, if split) in tin foil. Bake at 350° for 45-60 minutes, depending on weight, serve with lemon and melted butter.

Crab Cakes

Ingredients

  1. 1lb. Crab Meat
  2. 1 Egg
  3. 1tbs. Dijon Mustard
  4. Salt & Pepper
  5. 2tbs. Flour
  6. 2tbs. Virgin Olive Oil
  7. 1 Lemon
  8. Butter

Combine Crab meat, egg, mustard, salt, pepper, & Flour. Put in fridge for five minutes then take out and shape. Put in the fridge to freeze. Put butter and oil in skillet on medium. Dredge cakes in flour then shake off excess. Fry in pan until golden.
